May 4 ...


Is all about food :).

I went grocery shopping today. It always feels good to have a well stocked fridge & pantry ... it makes cooking SO much easier.

And today I cooked a full dinner AND a dessert. I haven't done that in about two weeks, but now that I've been freed from the sewing machine (at least for a few days) Matt has been relieved of KP.

Breakfast menu:
Healthy Banana Blueberry Muffins (just pulled these from the oven ... YUM!)
Cinnamon-Oat Pancakes
Homemade Applesauce (we need to use up some not so sweet/crisp apples)

This weeks Dinner menu:
Chicken & Wild Rice Casserole w/ Green Salad & Asparagus (Mini Cheesecakes for dessert)
Chili and Pretzels
BBQ Beef Sandwiches on Homemade Rolls w/ Green Salad
Pasta w/ Green Salad and leftover Rolls
Baked Chicken Fingers w/ Lemony Smashed Potatoes & Tender Lettuce Salad
Pizzas on the grill (I think I'm going to try this pizza dough ... we'll see what the boys think ;).

Can you tell I was looking to my "Everyday Food" magazines for inspiration this week? I try to mix in a few classics that we like with a few quick meals (BBQ Beef & Pasta are both super fast!) and at least one new recipe (Baked Chicken Fingers).

Now onto the foods I eat almost every single day ...

Homemade (or fresh ground at the store) Peanut Butter or Almond Butter ~ Served either on toast or with Pink Lady Apple Slices.

Plain Yogurt (I could not stand any kind of yogurt while pregnant with Ethan and have only recently been able to tolerate it again ... but there is something about the tartness of plain yogurt that is SO good right now ... go figure.) with a bit of honey & granola. I've had this everyday (if not twice a day) for about 3 weeks now. Mmmmm.

It could be worse right? What do you crave on a daily basis?

My menu this week is seriously lacking. Like I one had Monday & Friday planned. I am making jam again today so maybe we'll have breakfast for dinner.

On a daily basis I crave peanut butter! And yes on toast or fruit. Almond butter is good too but there's something about peanut butter that I must have. :)

I'm all about the homemade peanut butter. I've been eating with cinnamon bread or raisin bread and apple slices. Yum! I'm also a big plain yogurt fan. I really like the plain greek yogurt. It's really creamy and tastes wonderful with berries and granola (also homemade).
