Like really love it. I almost never miss a meal ... in fact, in the words of Dr. Laura, "I go to bed at night just so I can wake up and eat breakfast."
It's a good thing I've been blessed with good metabolism and enough self-control to keep things in check ... because I really love food ... oh wait, I said that. And again, I run so I can have dessert every single day.
Anyway, given this knowledge of me, it only makes sense that I blog at least once a week about food ... in some way, shape or form.
Today, I'll make it easy ... what we're eating lately.
Tonight:: An almost weekly staple ... veggies (red bell pepper, summer squash, zucchini and sweet onion) tossed in olive oil & seasoning, then grilled in our grill basket. Served with chicken sausage and rice (sometimes brown, sometimes white ... just depends on the mood I'm in). So quick, so easy and very healthy.
Sunday night:: Smoked chicken (Matt cooks chicken thighs (cheap, cheap) on the smoker with a dry rub, then we remove the skin and shred or chop the chicken and add bbq sauce) sandwiches with smash fries (our knock off of "Smashburger's" fries ... Ore Ida fast fries mixed with a little olive oil, fresh rosemary and garlic) and salad. Healthy, that's debatable ... the chicken with skin removed is still better than red meat, the buns are whole wheat, the fries are eaten in small portions and the salad is a big portion. Whatever the case, it's good eats :D.
Saturday night:: Fresh 'swiss' burgers (i.e. not frozen) with the smash fries and salad. We're very predictable ... we eat salad almost every night. This is not a typical meal ... and I will make no qualms about its health factor. But it's not McDonalds either.
Still to come ...
Tequila Lime Chicken with Mexican Rice and homemade flour tortillas (Matt's made these twice in the last few weeks (different recipe) ... and they are dangerously good, especially hot off the griddle with a little butter and cinnamon & sugar ... I'm just sayin').
Chicken quesadillas using leftover chicken and homemade flour tortillas probably served with a big salad.
For sweets, I made this cobbler on Sunday, with blueberries. It's better cold the next day for breakfast ... again, dangerous!
And I plan to make another loaf of this bread this week.
Oh and E and I are very excited about the pineapple we bought tonight ... I'll have to have enough self control to not eat it all and end up with a tummy ache and a mouth full of canker sores.

I just posted a thread on SC today about summer recipes. Its 8 million degrees around here and I've hit my minimal cooking in the summer mode. Really, this just means its too hot to use the oven and too hot to grill and too hot to eat anything other than fruit and ice cream, which is pretty much all I've wanted lately. This is a slightly unusual week for cooking anyway since I had a late meeting tonight so we had make n take pizzas and we're having dinner with friends tomorrow. The rest of the week I'll be making lo mein with rice noodles(beef and brocc for Shawn, veggies for me), tortellini with homemade pesto and veggies and shrimp and black bean salad.
Tonight I made Chinese Chicken Salad. I have a great recipe for that - you should try it sometime. :D
Tomorrow we're going to a bbq for small group, so I'm only making lemon bars for that. Wed. we are having a friend over for dinner & I think we're going to have turkey tacos (gag you - I know), Thursday will be homemade hummus, veggies, & pita, & Friday will be either chicken & veggies or bbq ribs.
