Does your Monday need something to make it a little sweeter?
Well I look forward to Mondays now that I am my own boss (actually I'm pretty sure I report to a five year old). They mark a fresh start, the first day of a week of possibility ... lots of potential for the ever growing to-do list :).
But I remember the day when Monday was not so welcome and could have used something to make it a bit sweeter.
Today was filled with literal "sweets" for me ~
1. Canning a batch of blueberry jam ~ turned out perfect and SO delicious. I had to "sample" some right away on hot buttered 9-grain bread.
2. Re-canning a batch of strawberry jam ~ turned out runnier than before, but did look better and didn't separate. I'll just call it strawberry sauce :).
3. My lovely (saintly, mother of 5 girls) neighbor brought me and Ethan 2 slices of vanilla bundt cake. Yum.
4. After reading Pioneer Woman's cooking blog this morning, I knew I had to try this cake. Tonight seemed like a good night. I wanted to make it for Matt. To tell him thank you for all his hard work and let him know how much we love and appreciate him ... so much so I baked a cake for no other reason than that .. and on a Monday night no less :). It's chilling for 30 more minutes and then we shall enjoy a slice while we watch our favorite show together :).

Sorry the recanning didn't turn out. Now I'm even more hesitant to try it. Enjoy the bluberry though! :)

sounds like a lovely Monday to me. We just returned from the mountains and I was hoping to bring home lots of berries and other produce from a fruit stand on our way home, but sadly none of them were open on a Tues afternoon. So much for my canning plans!

I also made jam this week, Rasberry my favorite!
