Meals on Monday

HA! Remember this weekly post?

Well I almost forgot about it too, but then, no less than ten times today I thought, I should share this on Facebook ... and then I thought, Really, is that what people want to read for my updated status.

If you know me at all, you know that my world revolves around food. So I'm thinking of it often and somedays it really is the highlight for me.

Recent Meals {and a plug for Costco}::

Saturday - Matt's homemade thin crust {as close as we can get to wood fire oven at home} pizza, served with salad

Sunday - Costco's Rotisserie chicken noodle soup (so worth the $10), served with artisan bread and salad

Today - Spicy Tomato Soup with grilled cheese on artisan bread / Homemade applesauce

Later this week::
  • Chicken wraps - made with rotisserie chicken {again from Costco}, fresh cooked tortillas {also from Costco} and homemade ranch.
  • BBQ chicken sandwiches - made from the same rotissere Chicken, served with sweet potato fries {Costco} and salad
  • Sausage, Bell Peppers {Costco} & Onions, grilled and served with yukon gold potatoes.

In other food news, I made these "Salted Caramel Butter Bars" last Thursday. They are as wonderful as they sound. DO NOT make them unless you can give all but 2 bars away. I'm sure I've gained 5lbs since last Thursday. Yikes!!

I made a good new dish tonight. It was super easy & healthy and everybody liked it. Win-win-win. I linked to it on FB.
Um the salted caramel bars were so, so good. Thank you for sharing them with us. :)
And that's the same ranch recipe we use except I do a half cup each of mayo, sour cream and buttermilk. It's so good. I actually just made some today with the itty bitty chives sprouts coming back in our garden. :)

Moo Shu Pork (foodnetwork.com)So good and surprisingly very filling!

Crockpot Pulled Pork Sandwiches with coleslaw. Super easy and I got two dinners out of it.

Navy Bean and Ham Soup with Sourdough Bread and Salad.

Tamale Pie with Tortilla Chips and Jello Salad. A new favorite for me. It kind of reminds me of a mexican lasagna.
