Monday, Monday ...

Okay, now that I've got Friday's post done I can work on today's post :).

For some reason Mondays have me thinking about food ... and since I missed posting the last part of the week, let me catch you up on my "What's for Dinner."

Sunday - BBQ beef sandwiches on homemade pretzel bread!

Okay, this is one of my favorite new "recipes" and I have to share it with you. I've done two versions thus far, BBQ Beef or Mexican Beef. Either way, you start with frozen round steak. I know nothing about buying meat, I tend to go with what looks good and is priced good when it comes to any beef besides ground beef. So seriously, if it says "round" and "steak" I say it will work for this dish. The morning of the day you want to serve this take your round steaks out of the freezer (Yes frozen, how great is that? No remembering to thaw the meat!) and place them in your crock pot. Add in beef broth (if they're sticking up a bit because they're frozen, just estimate where they'll be when they cook down and use that much liquid) so it just covers the top of the meat. For BBQ beef, add in seasoned salt, pepper, garlic and a few tablespoons of BBQ sauce. For Mexican beef, add in garlic, salt, pepper, cumin, etc. Let the beef cook on high 4-6 hours depending on the amount you are cooking. Once it looks cooked, turn it to low until 30 minutes before you're ready to eat. Remove beef from crock pot, shred beef and discard any fat. Reserving about a 1/2 C of the liquid, discard the remaining liquid in the crock pot. Add the shredded beef and reserved liquid back to the crock pot. For BBQ beef, add bbq sauce until you're happy with the taste/consistency. For Mexican beef, add salsa or green chilies to spice it up. Let it heat through again and you're ready to serve!! So easy, so delicious!!

Dinner tonight was steak, corn on the cob & parmesan and garlic potato slices cooked on the grill with the steak. Yummy. Oh and s'mores for dessert. :)
Tomorrow either teriyaki chicken kabobs or BLTs. Depends on how much time I have in the morning.

The recipe you shared sounds good. I'll have to give it a try. Thanks for sharing.

Monday night-Teriyaki (is that spelled right?? Looks wierd for some reason) Chicken, rice and corn. Yes, I know corn isn't usually a veggie you put with Teriyaki Chicken but it's what was quick!

So my dinners are a bit boring these days with the new diet and I tend to be cooking something different for me and Shawn...let's see, last night was steak with mushrooms for Shawn and a veggie burger for me and peas. Tonight was Shawn's dinner night and I was not hungry, so I had cereal with soy milk, no dairy for me :( tomorrow I am making stir fry, veggies for me and beef for Shawn.
