Nothing better to start the week off right then a 3 mile run (yes, I'm up to 3 miles and loving it!) on a crisp cool morning ... followed by the smells of warmth of cinnamon rolls baking. Thank you to Kelly for recommending this recipe, "Clone of a Cinnabon" on her blog. I have to tell you, I'm not a huge fan of most homemade cinnamon rolls (my past attempts included), they always seemed dry and lacking. Well not these my friends, these are divine ... the perfect balance of a crusty outside with light and chewy inside and a delicious mix of gooey brown sugar and icing. Seriously, the three of us each enjoyed one this morning and I promptly put two aside for tomorrow and sent the rest away.*****
My notes:
Since I got rid of my bread maker long ago, I used my KitchenAid mixer and dough hook instead. I added all the wet ingredients first, followed by the dry (using regular yeast, not bread machine). Once the ingredients came together, I set the mixer to medium speed and let it kneed the dough for about 5 minutes.
There were several reviews about making the dough by hand too ... and while it would be much more work, I don't think you would regret the time it takes once you tasted these!
Lastly, I baked mine at 350 degrees for about 30 minutes. I let them cool for about 5 minutes and then flipped them into another 9x13 dish so that all of the brown sugar/butter goodness was on top. Then I iced them liberally ... if you're eating this cinnamon roll, you should not be concerned with calories!!
