Going into hiding ...

Feeling like I have a really full plate right now ... and it's full of lots of good things, but full none the less ... and so some things have to be "sacrificed" and my blog (and the online world) is a big one for me to give up ...

Not to worry though, I'll be back at least a few times next week ... just trying to make some room on this plate for time with family, friends (only 4 more days Jess!) and of course some good cookin' so I can actually eat from the plate too!!

And in case you "needed" a recipe to try, I made these cookies this past weekend and they are divine ... seriously, I'm warning you it makes 6 dozen and you will want to eat them all ... so be sure to give a lot away or you'll have a tummy ache like me ;).

Pumpkin White Chocolate Drops

Ingredients:
2 cups butter softened
2 cups granulated sugar
1 can {16 oz} solid pack pumpkin
2 eggs
4 cups all-purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1 bag {12 oz} white chocolate chips

1. Preheat oven to 375*F. Grease cookie sheets

2. Beat butter and sugar in large bowl until light & fluffy. Add pumpkin and eggs, beat until smooth. Add flour, pumpkin pie spice, baking powder & baking soda; beat just until well blended. Stir in chips.

3. Drop by teaspoonfuls about 2 inches apart onto cookie sheets. Bake about 16 minutes or until set & bottoms are brown. Cool 1 minute on cookie sheets. Remove from cookie sheets to wire rack to cool.

~Makes about 6 dozen cookies~

I'm not crazy about pumpkin stuff and really don't like white chocolate so I'm not sure why I did it but I made these cookies. Oh my goodness they are so good! I'm actually in the process of making them right now. It makes a lot! But they're perfect for sharing. Thanks for sharing the recipe!
