Meals on Monday

Well I may not be consistent about blogging these days ...But trust me, I never stop thinking about food :).

**Disclaimer - there will be no 'baking' recipes posted as I'm on a 30 day 'sugar fast.' What? I know. I'm giving it a whirl, we'll see how it goes. I'm 3/4 of the way into day 1 and not really loving it. **

This week's meals::

Tonight- Baked Ziti, Salad & Baguette

Tuesday - Bunko (whoo-hoo this mama doesn't have to cook)

Wednesday - Awana Award Night ... which means a quick dinner ... Spring Rolls for Matt & I, Mac-n-Cheese for E (classy, I know)

Thursday - Baked Southwestern Eggrolls
I made these a few weeks ago and they are SO good and SO good for you. Not the easiest (not really hard, more just messy) to make, but worth it .. and they re-heat well. I served them with Pioneer Woman's Resturant Salsa, sour cream and avocado slices.

Other options:


Grilled kielbasa & roasted veggies -
I love the 'rainbow' of red potatoes, carrots, yellow squash & green zucchini.
Here's how I roast veggies inside:: Bring pot of water to a boil and add cubed potatoes (skin on) & peeled and quartered carrots. Boil for about 7 minutes. While they are boiling, generously grease a cookie sheet with olive oil and put in oven. Heat oven to 450-475. Slice squash & zucchini and add to a large bowl. Drain potatoes & carrots and add to other veggies. Toss veggies in a little more olive oil and season salt & pepper. Carefully remove HOT cookie sheet from oven and add your veggies, making sure to spread into a single layer. Roast in oven for 15-20 minutes until they get nice and golden/dark brown. Mmmmm.


Chicken burgers w/ sweet potato fries

To help my 'sweet tooth' ...
  • Natural Peanut Butter (no sugar added)
  • Plain Yogurt w/ Honey w/ berries
  • Banana w/ Peanut Butter
  • Apple w/ Peanut Butter
Do you see a trend (hello peanut butter!!)? I'll let you know what else works next week ...

    That recipe for roasted veggies looks so good! I'm going to give it a try next week. And I'd really like to try the eggrolls, do you think they'd be any good without corn or cheese? Maybe some zucchini?

    And I'm with you on the sugar strike!

    I've been meaning to ask you for the egg roll recipe. I even bought the wrappers to make them & kept forgetting to ask. So thanks for posting it!
    And good luck on the no sugar thing. I don't know that I could do it.

    Yes, thanks for sharing I can't wait to try the egg rolls! And no sugar, for 30 days ... I'd be out first thing in the morning when I put a scoop of sweetness and splash of cream in my coffee.

    Those egg rolls look awesome! And thanks for introducing me to Annie Eats. I love a good food blog and a lot of her stuff appeals to me.

    On that note, I made her Tortellini Soup tonight with bread and salad. Really good. I can't wait for leftovers tomorrow at lunch.We also tried Thai Shrimp Curry from Steamy Kitchen and Ham and Eggs Benedict with Hollandaise Sauce and Asparagus made from Easter leftovers.
