Of the several items I made, the pumpkin bread stole the show. I've loved the pumpkin loaf at Starbucks for several years now (and am so happy they carry it year round) but had never thought to try and duplicate it ... until last week :). This recipe comes very close.

** My notes - I scaled the quantity down to 24 servings (2 loaves); used 1/2 sugar and 1/2 brown sugar; subbed 1/2C applesauce for one 1/2C oil; and added chopped pecans and sugar in the raw to the tops. **
I tried a few other new recipes ...
Granola Bars - this recipe has potential, but as is made for very crumbly bars. I think it may need more honey.
Wheat Crackers - I'm not sure what to think of this one. I didn't get the dough thin enough so it's not quite the cracker texture I was after ... I might try it again.
Then I made my tried and true favorite cookie last night. I love that it makes a small batch and combines my favorite cookie ingredients, oatmeal, peanut butter and chocolate.
That's all for tonight. I'm still feeling exhausted and tonight I'm getting in bed before 9PM! I have a million things I should do, but tonight I'm choosing rest in hopes of a more productive, better mood, etc. tomorrow :).

Don't you just LOVE pumpkin bread, I sure do. I'll have to give your recipe a try too. And certainly the crackers, though I'm in search of a good cheese cracker recipe as well. Have a great Friday, I'll give you a call.
get out! that 'evil' pumpkin loaf is what got me hooked on starbucks, it starts with a loaf then leads to a pumpkin spice latte, and soon you have to visit at least once a week in the fall! teach me your ways oh wise one! (pssst I miss you and love you- I'll call you tomorow to discuss details about Saturday...I didn't forget :)

The pumpkin bread was delicious. I will be making it next week for sure. Fall baking weather will be in full force next week. I'm smiling just thinking about it!
The granola bars turned out crumbly for me too. I think it's the honey too. They were still good though. I used peanut butter instead of butter. Mmmmmm.
I hope you got some good rest last night! Do you need help sewing?
Pumpkin Bread is up there on my favorites! Great post idea. I will have to give you my pumpkin recipe, but I will double check it with the one you already used to make sure that they are different. Then you can let me know which one is better...
Not a pumpkin' lover but it still looks so yummy and Fall-ish! :)
