Meals on Monday

I know, it's really Tuesday, but with the power of blogger, I can pretend like I posted this on Monday :).

























Just wanted to share some of the yummy recipes we've been making around here. Being the people person that I am, I'm always interested in hearing what others eat ... it's a little peek into their lives.

Breads & Sweets::






















  • No-Knead Bread - such an easy recipe and so good with a bowl of soup
  • Crock-pot Applesauce - seriously. Again, SO easy and so yummy to wake up to the smell of apples baking overnight. I follow the recipe for measurements. I usually double the recipe for the slow cooker and substitute brown sugar for white. Set your crock-pot on low and let it cook all night. I find 8 apples makes about 1 1/2 quarts.
  • Muffins that taste like Doughnuts - SO good. I don't dip the whole thing in butter, just the tops, that's plenty. Oh and last time I snuck in half whole wheat pastry flour. It's a little better, right?!? ;).
Soup::
  • Slow Cooker Lentil & Rice Soup - This was tonight's dinner and it's not really a hit yet, so I'll refrain from sharing the recipe.
Dinner::
  • Spaghetti - a classic, right? This is one of E's top 3 foods, so we have it quite a bit, but can not bring ourselves to use canned/jarred sauce. This is such a fast & easy sauce with a very fresh taste. Matt usually makes it along with some grilled sausage to add and grilled flatbread for the side. Mmmm. now we're talking.
I'm sure I'm forgetting something, but those are the ones I'm thinking of right now :). Now I'm off to get some pumpkin muffins going for a little mister's breakfast.

I love it when you share meals & recipes! I enjoy seeing what's on other peoples menu and you never know when you'll pick one up as a favorite!
We're having
Meatloaf: Betty Crocker style w/some Sweet Baby Ray's on top! Green Beans, and mashed potatoes.

Chicken Cordon Bleu, scallop pot. veggies

Pulled Pork: sandwhiches mmm! pasta salad fruit.

Fajitas! Rice, Corn, and of course Chips and Salsa!

Nothing too exciting has been cooking at our house. I did make chicken noodle soup & bread inspired by my trip to the Amish country. That was really good! Now that the weather has finally turned to fall I'm baking a lot - cookies, muffins and bread. We're canning applesauce this weekend so the house will smell really good! Thanks for sharing your recipes! I'm going to try that no knead bread!

Fun idea! I'm always looking for someone to talk to about cooking/food. Here goes!

Monday - Pork and veggie stir fry. Used up all the little bits of things in my fridge before grocery shopping day.

Tuesday - Apple Chicken Sausage with roasted butternut squash, broccoli, cauliflower and carrots.

Wednesday - Korean Beef Bowls from Steamy Kitchen.

Thursday - Chicken and Biscuit Casserole (Allrecipies.com) and canned peaches.

Friday - out to dinner. Yay!

Saturday Morning - Pumpkin Pancakes, Crock Pot Applesauce (thanks for the inspiration!) and sausage patties.
